This easy five-ingredient dessert recipe for globi (sphere or ball in Italian), an ancient Roman predecessor to cheesecake bites, dates back 2000 years. Max Miller, host of YouTube's "Tasting History" discovered this recipe in the oldest book of Latin prose De Agricultura by Cato the Elder.
Pro Tip: Soften honey in a microwave for 10 seconds for easier coating and dipping.
- 1 cup ricotta
- 1 heaping cup whole grain flour, such as spelt or durum
- ¼ cup sugar, (optional)
- Vegetable oil, for frying
- ⅓ cup honey
- Poppy seeds, for sprinkling
Mix the cheese and flour in a large bowl along with the sugar, if using. Shape the dough into 1-inch balls.
Fill a saucepan with about an inch of oil and place over high heat until it reaches 350˚F on a deep-fry thermometer. Lower heat to medium, and working in batches, fry 2 to 3 balls at a time, turning every 10 to 15 seconds with tongs, until golden brown, 1 to 1½ minutes. Remove to a wire rack set over paper towels to drain. Repeat with the remaining globi.
Dip the globi in honey, then return to the wire rack. Sprinkle with poppy seeds and serve.
