For our "bite-size" show, chef and Life Is a Party author David Burtka shared three of his favorite mini appetizers: these Brie bites, Tomato Pesto Bites and Figs with Goat Cheese and Pink Peppercorn Honey. They are all quick and easy and require only four ingredients! 

Pro Tip from David: Feel free to swap out the almonds and/or apricots for another type of nut or dried fruit, if you like. 

Ingredients

  • Small wheel of Brie cheese
  • 16 store-bought phyllo shells
  • 16 slivered almond pieces
  • 2 or 3 dried apricots, cut into a total of 16 slivers

Yield

Serves: 16

Preparation

Preheat oven to 350°F. 

Cut the rind off the top of the Brie. Scoop 1 tablespoon of the cheese into each phyllo shell and place them on a baking sheet. Place an almond sliver and an apricot sliver on top of each cheese-filled shell.  

Bake for 10 minutes, or until the shells are golden brown and the cheese is bubbling. Let cool for about 5 minutes before serving.
