Ingredients
- ½ cup pancetta, finely chopped
- 2 eggs, beaten
- ½ cup grated Pecorino Romano cheese
- 2 tablespoons black pepper
- 2 slices white bread
- 3 slices fontina cheese
- 2 tablespoons extra-virgin olive oil (EVOO)

Preparation
In a skillet, cook pancetta over medium heat until fat is rendered and pancetta is crisp. Transfer to paper towels to drain, leaving the fat in the pan.
In bowl, combine eggs, pecorino, black pepper and crispy pancetta. Coat bread with egg mixture on both sides, then sandwich fontina between bread.
Add EVOO to the pancetta oil, then fry the sandwich in the pan on both sides until golden brown.
Let cool slightly, then cut into 8 triangles.
