Food blogger, cookbook author & mom Danielle Kartes shares her recipe for crunchy baked chicken tortilla roll-ups that kids can help make, too.

Ingredients

  • 8 ounces softened cream cheese
  • ½ cup salsa
  • 1 cup shredded cheddar cheese
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 4 cups shredded rotisserie chicken
  • 12 soft taco-sized flour tortillas
  • ¼ cup melted butter

Preparation

ADULT STEP: Preheat the oven to 375˚F. 

GET THE KIDS INVOLVED: In a mixing bowl, combine the cream cheese, salsa, cheddar cheese, seasonings, and salt and pepper. Fold in the shredded chicken. 

In the center of each tortilla, place 2 to 3 tablespoons of the chicken mixture and flatten it down. Roll up the tortilla like a tiny burrito and place on a parchment-lined baking sheet. Repeat this process with the remaining tortillas and chicken mixture, then brush each one with melted butter.  

ADULT STEP: Bake 25 minutes until golden brown and crisp.
