Ingredients
- 2 tablespoons extra-virgin olive oil (EVOO)
- 1 onion, chopped
- 1 carrot, chopped
- One 28-ounce can whole peeled tomatoes
- A few stems parsley
- Grated nutmeg
- Salt and pepper
Yield
Serves: 4 to 6
Preparation
Heat olive oil in a medium pan or dutch oven over medium-high heat. Add onion and carrot and cook until softened, about 8 minutes. Add tomatoes, parsley, and grated nutmeg. Season with salt and pepper. Simmer sauce for 30 minutes.
