Fresh fennel, gin and the herbal notes of chartreuse are shaken together for an aromatic cocktail that packs a heady punch.

- 1 ¼ cups chopped fennel bulb and ½ cup fronds, plus more fronds for garnish (from about 1 medium bulb)
- 3 ounces gin
- 1 ounce fresh lime juice
- 1 ounce Green Chartreuse liqueur
- 1 ounce simple syrup
- Seltzer, to top the drink (2 to 4 ounces)
In the bottom of a cocktail shaker, using a muddler or the handle of a wooden spoon, muddle the chopped fennel and ½ cup fennel fronds until well mashed, about 1 minute. Add the gin, lime juice, Green Chartreuse, and simple syrup. Fill the shaker with ice. Shake well (about 20 good shakes) and strain into 2 rocks glasses filled with ice. Top with seltzer. Garnish with fennel fronds.
