For the avocado toast and eggs:
  • 1 avocado
  • Salt and pepper
  • 2 slices whole grain bread, toasted
  • 2 large eggs
  • Splash of milk
  • Oil or butter, for pan
For the tea:
  • Water
  • Tea bags
  • Milk
Serves: 1

For the toast: Halve, pit, and chop the avocado flesh. Scoop into a bowl, and mash with salt and pepper. Spread on toast.

In another bowl, crack 2 eggs and mix with milk. Heat oil or butter in a small pan over medium heat. Once hot or melted, add eggs and scramble until desired doneness.

Top avocado toast with scrambled eggs. Season with salt and pepper.

For the tea: Bring water to boil in a kettle; as soon as it comes to a boil, pour over tea bag in a mug. Let it steep for a few minutes, then add a splash of milk.
