This pretty no-bake dessert from Food Network's "Best Baker in America" judge Jason Smith of southerncountrybling.com layers homemade waffles with berry cream cheese frosting and is topped with fresh berries.

Ingredients

For the cake
  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 egg
  • 1¼ cups whole milk
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 2 tablespoons finely grated lemon zest
For the cream cheese frosting
  • 1 (8 ounce) package cream cheese, at room temperature
  • 1 cup heavy whipping cream
  • 3 cups confectioners’ sugar
  • 1 teaspoon vanilla extract
  • ½ cup fresh blueberries
  • ½ cup fresh strawberries, hulled and finely diced
For the garnish
  • 1 cup fresh blueberries
  • 2 cups sliced strawberries
  • 3-5 lemon slices

Serves: 10-12

Preparation

For the cake, preheat a waffle iron. In a mixing bowl, whisk flour, granulated sugar, baking soda and salt. Add egg, milk, butter and vanilla and mix to combine. Pour 2 heaping tablespoonfuls of batter into each well of the waffle iron, close lid and cook until set, 4-5 minutes. Repeat with remaining batter and let cool.

For the frosting, in a standing mixer fitted with the paddle attachment, combine cream cheese and heavy whipping cream on low speed. Slowly add confectioners’ sugar and vanilla and beat to combine, increasing the speed to high and mixing until stiff peaks form. Gently fold in the berries by hand.

To assemble the cake, place a waffle on a cake stand and spread the cream cheese icing on top. Repeat with the remaining waffles and icing, ending with a final layer of icing on top, then garnish with berries and lemon slices.
