Rachael's Mother's Day dessert—lemony parfaits with vanilla ice cream and berries—couldn't be quicker, easier or more satisfying. And you don't even need to turn on the oven! It's the icing on the cake after her Penne with Sweet Vermouth and Cream Sauce and John's Mama Knows Best Cocktail (an orange-flavored spritz).

Pro Tip from Rach: For the best results, make sure the limoncello is very cold and use the highest-quality ice cream you can get. 

Ingredients

  • 1 cup heavy cream
  • 1 lemon, zested
  • Sprinkle of sugar, optional
  • Lemon extract, optional
  • Splash of limoncello
  • Berries (raspberries and/or blackberries), one small container of each
  • Vanilla ice cream
  • Amaretti cookies, optional to serve

Preparation

Make these in a cocktail glass of your choice. 

Whisk up heavy cream in chilled bowl with zest of 1 lemon and a sprinkle of sugar (if using) to make your lemon whipped cream. If you bake, you may have lemon extract and, if so, add a ½ teaspoon per cup of cream. 

Start the parfait with a few raspberries and/or blackberries at the bottom of the glass and douse with a little well-chilled limoncello. Add a scoop of the best vanilla ice cream you can find and top with whipped lemon cream and more berries. Garnish with a curl of lemon peel and serve with a few amaretti cookies on the side (if using).
