Ingredients

  • 1 ½ cups rolled oats (gluten-free or regular)
  • 1 cup almond butter or any nut butter of your choosing
  • 3 tablespoons maple syrup 
Optional:
  • One dash vanilla extract
  • 2 tablespoons chocolate chips 

Yield

Serves: Makes 10 to 12

Preparation

Line a plate or dish with parchment paper and set aside.  

In a large mixing bowl, combine the oats, almond butter, maple syrup and vanilla (if using) until combined.

Fold through the chocolate chips (if using).

Using your hands, form the mixture into 10 to 12 balls and place them on the lined plate. Refrigerate for at least 1 hour to firm up. Store, covered, in fridge.
