Making the waffles with half-whole wheat flour and half-white flour boosts the fiber without compromising on flavor in this kid-friendly recipe by caterer-to-the-stars Mary Giuliani. Mary loves making this "breakfast snack-tivity" with her daughter Gala. (Gala loves whisking the waffle batter!)

Ingredients

For the waffles:
  • 1 cup all-purpose flour
  • 1 cup whole-wheat flour
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 2 cups whole milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter, melted
For the skewers:
  • Nutella®
  • Banana slices
  • Strawberry slices

Preparation

Preheat a square-shaped waffle iron.

In a bowl, combine the dry ingredients. In a separate bowl, combine the milk, eggs and vanilla, then combine with the dry ingredients. Reserve some melted butter for the waffle iron, then mix the melted butter into the batter.

Brush the waffle iron with the reserved melted butter, then ladle the batter onto the hot waffle iron and cook according to equipment instructions.

Cut waffles into small squares. Spread Nutella® on one side of half the waffle squares, then set the other waffle squares into place for mini-waffle sandwiches.

Thread skewers with a mini-waffle sandwich, banana slices, another mini-waffle sandwich, and strawberry slices.
