A sweet-and-salty spice blend adds just the right balance of flavor to this beer batter from Chef Greg Baxtrom of Brooklyn’s Olmsted.
Greg uses this batter to make Olmsted’s Beer-Battered Squash Rings, which are straight off of his restaurant Olmsted's menu.

Ingredients
- 2 cups all-purpose flour
- 1 cup cornstarch
- ½ tablespoon garlic powder
- ½ tablespoon onion powder
- ½ tablespoon cayenne powder
- ½ tablespoon sugar
- 1 teaspoon salt
- 1 egg
- 1 cup beer
- About 1 ⅓ cups sparkling water

Preparation
In a mixing bowl, whisk together dry ingredients, then whisk in egg, beer and sparkling water until thoroughly combined.
