I like to serve them with this lemony parmesan mayonnaise for dipping but they're just as delicious straight off the grill without any sauce. If you wanted to serve these as a side, you could also drizzle with this sauce over the top.

Served with a slushie spritz or a frozen watermelon margarita, this simple app will having you entertaining outside all season long.

Ingredients

For the Prosciutto-Wrapped Asparagus:
  • 16 asparagus spears
  • 16 thin slices of prosciutto, about ½ pound
For the Lemony Parmesan Dipping Sauce (optional):
  • ½ cup mayonnaise
  • Zest and juice of 1 lemon
  • ¼ cup Parmesan cheese
  • 1 clove garlic, grated
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Yield

Serves: 16

Preparation

Snip off the tough ends of the asparagus. Wrap each half of prosciutto around the asparagus and set aside.

Heat a grill to a medium heat. Using a basting brush or paper towel, oil the gill so the prosciutto doesn’t stick. Place the wrapped spears onto the grill and cook for 4-5 minutes per side or until prosciutto is crisp. If the prosciutto sticks to the grill, let it keep cooking. It should be easy to flip when it’s cooked. Remove to a platter.

If you’re making the dipping sauce, mix together mayo, lemon juice, lemon zest, parmesan, garlic, salt and black pepper. Serve with the asparagus.
