"Not your ordinary garlic bread!" Rach says. "The fresh garlic and Parmigiano-Reggiano cheese make it something special."
Rach likes to serve this with her Chicken and Ricotta Meatballs.
Ingredients
- 4 cloves garlic, crushed
- 2 tablespoons butter
- 2 tablespoons extra-virgin olive oil (EVOO)
- 1 loaf crusty bread, split
- 3 tablespoons grated cheese, Parmigiano-Reggiano or Romano (optional)
- Chopped fresh parsley
Yield
Serves: 4 to 6
Preparation
Combine garlic, butter, and EVOO in a microwave-safe dish or small saucepan. Heat in microwave for one minute or in saucepan over moderate-low heat for three minutes.
Toast split bread under broiler. Remove bread when it is toasted golden brown in color. Brush bread liberally with garlic oil. Sprinkle with cheese, if desired, and parsley. If you add cheese, return to broiler and brown 30 seconds. Cut into chunks and serve.
