My friend Lindsey showed me how to do this...just a jar of salsa and some chicken breast. That's it. Since then, I added a couple other ingredients to get the seasoning just right. Super good, though, especially when you crush up tortilla chips and put them on top." It's also a great budget-friendly choice for making ahead and freezing.

Ingredients

  • 1 to 1 ½ pounds boneless, skinless chicken breasts
  • 12 ounces salsa
  • ¼ cup water
  • ½ teaspoon salt
  • 3 tablespoons sour cream
To Serve:
  • White rice
  • Sour cream
  • Shredded cheddar cheese
  • Sliced avocado

Yield

Serves: 6

Preparation

Put the chicken in a Crockpot, then top with the salsa. Add the water and salt. Cook on high for 4 hours or medium for 6. Shred the chicken, then stir in the sour cream.  

Serve over white rice and top with more sour cream, cheddar cheese and avocado.
