GREEN banana bread, of course! Award-winning actor, singer, dancer and mom Sutton Foster shares a recipe for healthy and delicious spinach banana muffins from the blog JoyFoodSunshine.com for our St. Patrick's Day show. Sutton's four-year-old daughter Emily calls these her superpower muffins and Sutton also made a batch as her "Mystery Muffins" for her popular Instagram series "The Swap."

Ingredients

  • 2 cups old-fashioned oats
  • ¼ cup ground flaxseed
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt 
  • 1 teaspoon ground cinnamon
  • ½ cup coconut sugar or your favorite granulated sugar
  • ½ cup almond milk, whole milk or any other milk of choice
  • 2 cups packed spinach leaves
  • ¼ cup coconut oil
  • 2 extra-ripe large bananas
  • 2 eggs 
  • 1 teaspoon vanilla extract
