As Rach says, one of the things she and Clinton Kelly have in common is their dislike of baking. But what to do when you just want something sweet or you're having people over and need a dessert? Clinton comes to the rescue with this super-simple and elegant no-bake strawberry basil fool that anyone can make in minutes!  

Pro Tip from Clinton: Feel free to substitute other berries, if you like.

Ingredients

  • 2 pints ripe strawberries, hulled and sliced
  • 1 tablespoon granulated sugar
  • Juice from ½ lemon
  • 1 turn of freshly cracked black pepper
  • 2 cups chilled heavy whipping cream
  • 2 heaping tablespoons confectioners' sugar
  • 1 teaspoon vanilla extract
  • ½ cup strawberry jam
  • ½ cup sour cream
  • 6 basil leaves, thinly sliced, plus 6 small basil sprigs, for garnish
  • About 6 sugar cookies, vanilla wafers or ladyfingers, crushed

Preparation

Place the strawberries in a large bowl and toss with the granulated sugar, lemon juice and pepper. Let sit.  

Meanwhile, in another large bowl, beat together the cream, confectioners' sugar and vanilla until soft peaks form (don't overbeat). Add the jam and sour cream and mix until incorporated.  

Add the sliced basil to the strawberries and stir.  

In six individual glasses or ramekins, layer the following: whipped cream, marinated strawberries, whipped cream, marinated strawberries. Top each with crushed cookies and a basil sprig and serve. 

The fools can be held in the refrigerator for a couple hours before serving.
