Rach's husband John riffs on the classic Tom Collins with a thyme-infused simple syrup.  

He created this tasty cocktail to go with Rach's Chicken With Paprika, Pimento & Potato Chips

Ingredients

  • 2 ounces gin
  • 1 ounce fresh lemon juice
  • ½ ounce simple syrup or thyme-infused simple syrup
  • 2 ounces club soda
  • Orange wheel, cherry and thyme sprigs, for garnish

Yield

Serves: 2

Preparation

To make the thyme-infused simple syrup, heat ½ sugar, ½ water and a handful of thyme sprigs until sugar melts. Cool and store in refrigerator.  

Add gin, lemon juice and simple syrup to an ice-filled cocktail shaker, shake vigorously, then strain into an ice-filled Collins glass. Garnish with orange, cherry and thyme.
