If guests show up at your house on Thanksgiving Day with bottles of warm white wine, or you just forgot to refrigerate your wine, what can you do? Chef Jeff Mauro has two options for you. One, before Thanksgiving invest in some “wine pearls,” which can be kept in your freezer and popped into a glass of white to chill it instantly.
Option two, mix a large quantity of kosher salt with water and ice in a bowl, then drop in a closed bottle of wine. This lowers the temp of the water and chills a bottle of wine in about six-and-a-half minutes!
