Kelsey Nixon’s Pork-Apple-Quinoa Meatballs
Kelsey recommends serving these healthy meatballs over buttered egg noodles tossed with grated Parmesan cheese and a little chopped parsley.
- 1/2 cup quinoa, cooked
- 1 pound ground pork
- 1 tart apple, peeled and grated
- 1/2 white onion, grated
- 1/2 cup Italian breadcrumbs
- 1/2 cup Parmesan cheese, grated
- 1 large egg
Preheat the oven to low-broil and line a baking sheet with parchment paper.
In a large mixing bowl, combine all ingredients. Mix to combine, but avoid over-mixing. Once combined, portion into golf ball-sized meatballs and place onto baking sheet. Transfer to oven and bake for 8-10 minutes or until they being to turn golden brown.
