Miracle Batter that Can be Used Four Ways

Make sure you bookmark this, because this is the last batter recipe you’ll ever need! Former Top Chef contestant, Chef Ryan Scott, is sharing his amazingly versatile batter recipe and showing you how tiny tweaks can turn it into pancake, waffles, biscuits and even a lemon poppy cake!

The basic batter features all the items you’d expect: all-purpose flour, a little sugar, salt, baking soda, baking powder, butter, eggs, milk, vanilla and the slightly unexpected additions of lemon and cornstarch. An added bonus to this recipe is that you can prepare it ahead – make it on a Saturday night and then pull it out of the fridge in time for Sunday brunch.

Blueberry Pancakes

To make blueberry pancakes with the miracle batter, just add blueberries, that’s it!

Chocolate Waffles

Swap out the milk and lemon juice for buttermilk, and add cocoa powder.

Biscuits

For biscuits, cut back on the liquids and cut the (cold) butter in.

Lemon Poppy Cake

Add poppy seeds and lemon zest.
