Grill master and chef extraordinaire Curtis Stone invites you into his own backyard to show you how to make the most amazing smoked salmon you’ve ever had.

Step 1: Brine a nice, big piece of salmon.

Step 2: Soak a cedar plank in water for an hour or two. Tip: Make sure you’re using a plank made for this purpose – you don’t want to use any old piece of wood that could have been treated with poisonous chemicals.

Step 3: Using a charcoal grill, get a good fire going, but only on one side of the grill.

Step 4: Put your pre-soaked cedar plank in the grill and shut the lid for a few minutes, to get it nice and warm.

Step 5: Remove cedar plank with tongs, and put the fish onto it. Put the plank and fish back into the grill, but on the side without fire. This is important!

Step 6: Shut the lid for about 15 minutes. Treat yourself to a cool beverage while you wait.

Step 7: Remove and dress the fish with a fresh-cut lemon. Now, serve to your family and friends and reap the accolades.
