What's a Healthy Substitute for Cream in Creamy Soups?
We can all agree that there’s really nothing quite like a hearty and creamy soup (Creamy Tomato Tortellini Soup, anyone?!).
But if, like one NYC supermarket shopper named Barbara, one of your New Year’s Resolutions is to eat a bit healthier, you may be considering ditching the cream in cream-based soups.
Can it be done?!
Well, of course, it won’t taste exactly the same -- but you can get pretty close!
"There's really no substitute for the rich flavor of cream," Rach says. "[But] every pureed soup of course becomes creamy."
"If your family really loves that cool flavor of cream," she continues, "I would stir in some reduced fat yogurt."
Just pop a dollop in each dish, Rach suggests, and you won’t have to forego that creamy texture.
Good. Deal.
