Richard Blais’ Chocolate-Avocado Pudding Rice Cakes
Ingredients
- 3 rice cakes
- 1 avocado
- 1 tablespoon or so cocoa powder
- Honey
- Strawberries
- Olive oil, for drizzling
- Almonds
Preparation
Toast 3 rice cakes in a skillet. In a small bowl, blend avocado and cocoa powder. Sweeten with honey to taste. Chop strawberries and mix with a drizzle of olive oil. Spread avocado pudding over each rice cake and top with sliced strawberries. Sprinkle almonds on top.
