Airplane Snacks: Mediterranean Pitas

Ingredients
  • 1 cup shredded carrots
  • 1 cup cucumber, cut into matchsticks
  • 1/4 cup Kalamata olives, chopped
  • 1/4 cup feta cheese, crumbled
  • 1 lemon
  • 2 tablespoons EVOO - Extra Virgin Olive Oil
  • Salt and pepper
  • Mini pitas, cut in half
Preparation

 

 

In a medium bowl, mix everything together then stuff about 1/4 cup of the mixture into each pita half. Wrap it up and take it with you!
