How to make a batch of baked potatoes to use for 3 rollover meals throughout the week.

Night 1: Scallops Newburg-Stuffed Potatoes

Night 2: Corned Beef Hash-Stuffed Potatoes with Eggs

Night 3: Turkey Kielbasa, Sweet Potato and Leek Soup

Ingredients
  • 8 large baking potatoes
  • 5 large sweet potatoes
  • Extra-virgin olive oil (EVOO), for drizzling
  • Salt
Preparation

Preheat oven to 400 °F.

Place the potatoes on a baking sheet and drizzle with EVOO. Prick with fork, sprinkle with salt and bake in oven for 40 minutes, until the potatoes are cooked through and tender.

Let potatoes you're not using for the first meal cool completely and store them in the refrigerator for the other two meals.
