Jeanette's Fresh Corn Salad
This fresh corn salad is *so* easy to make for your next summer barbecue.
Ingredients
- 4 ears fresh corn on the cob, shucked and kernels removed
- 1 cup grape tomatoes, halved
- 1 small red onion, finely chopped
- 1 handful fresh parsley, stemmed and chopped
- 1 bunch (5 to 6) radishes, thinly sliced
- Zest and juice of 1 lime
- 2 tablespoons extra-virgin olive oil
- Salt and pepper, to taste
- Hot sauce, to taste (optional)
Preparation
In a large mixing bowl, combine corn kernels, tomatoes, red onion, parsley, radishes, lime zest and juice, olive oil, salt, pepper and hot sauce.
