Budget-Friendly Teriyaki-Style Salad

This is what Danielle Kartes — author of the blog and cookbook Rustic Joyful Food — calls a “rent week dinner.” Basically, it’s a budget-friendly meal that’s perfect for that time of the month when you don’t have much money left because rent is due (or anytime you need something quick, cheap and tasty!). Danielle says, “The dressing tastes the best the next day and lasts 3 to 5 days in the refrigerator.” 

Ingredients
  • 1/2 cup mayonnaise
  • 1/4 cup rice vinegar
  • 1 clove garlic, small, crushed and minced
  • 2 teaspoons honey
  • 1 teaspoon sesame oil, toasted
  • 1/4 cup soy sauce, tamari or
  • 1/2 teaspoon black pepper, cracked
  • 2 teaspoons sambal oelek
  • Salt, to taste
  • 1 head iceberg lettuce, shredded
  • 1 carrot, grated
  • 2 cups cabbage, shredded purple or green
  • 2 tablespoons sesame seeds, toasted
Preparation

Whisk together the mayonnaise, rice vinegar, garlic, honey, sesame oil, tamari, black pepper, sambal oelek, and salt to taste for the dressing. Drizzle over the lettuce, carrot, and cabbage, then sprinkle with toasted sesame seeds.
