Herbs and Israeli Salad With Falafel
Chef-author Michael Solomonov shows Rach how to assemble this delicious salad with a little bit of everything using recipes from his cookbook Israeli Soul.
Solomonov is the chef at Zahav in Philadelphia — a must-stop for Rach when she's in town — and calls this salad "a perfect poem of crunch and green."

- Leaves of mint and dill
- Chunks of cucumber and tomato
- Swirl of Quick Tehina Sauce
- Plenty of za'atar
- Falafel Salad Vinaigrette
Toss the vegetables and herbs with some vinaigrette. Sprinkle with za'atar and dollop with the tehina sauce. Serve with falafel on top.
