Michael Solomonov's Herbed Labneh
Minced apples and herbs add a sweet crunch to this rich and creamy yogurt cheese from Israeli Soul cookbook author and chef Michael Solomonov.
Michael uses this as a topping on his Potato-Leek Latkes along with Apple Amba, a chutney-like sauce, and Garlic-Feta Dip.
Ingredients
- 1 cup labneh, or strained greek yogurt
- 1 granny smith apple, very finely diced
- 1/4 cup finely minced parsley
- 1/4 cup finely minced dill
- 1/4 cup finely minced chives
- 1 tablespoon white truffle oil
- 1 tablespoon kosher salt, plus more as needed
Preparation
Mix to combine all the ingredients in a small bowl. Season with additional salt to taste.
