Japanese Savory Pancake (Okonomiyaki) | Easy Peasy with Jordan
Okonomiyaki is a quick and easy Japanese-style savory pancake, and four-year-old Instagram kid-fluencer @easypeasyjordan shares his family's recipe.
- 1½ cups plus 2 tablespoons flour
- 1 egg
- 1½ cups shredded cabbage
- 1 ¾ cups ground pork
- 2 tablespoons canola or vegetable oil
- About 3 tablespoons store-bought okonomiyaki sauce
- About 2 tablespoons mayonnaise, preferably Japanese-style such as Kewpie
- Bonito flakes (katsuobushi), to taste
- Dried seaweed flakes (aonori), to taste
- Pickled ginger (beni shoga), to taste
In a bowl, whisk flour, egg, and ⅔ cup water until smooth and lumps are gone. Add cabbage and pork and mix to combine.
Heat oil in a pan set over medium heat. Scoop ⅓ of the batter onto the pan and spread into a circle. Cook on both sides until a nice golden brown, 6 to 7 minutes. Transfer to a serving plate.
Spread okonomiyaki sauce on one side of the okonomiyaki, then drizzle with mayonnaise. Sprinkle bonito and dried seaweed flakes on top, then garnish with pickled ginger.
