Sunny Anderson’s Potato Pancake Made With Thanksgiving Leftovers
Ingredients
- Leftover Green Beans chopped
- Leftover Mashed Sweet Potatoes
- Olive oil
- Leftover Pumpkin Soup
- Cream cheese, softened
- Strawberry preserves
- Leftover turkey
- Maple syrup
- Fried eggs
- Gravy
Preparation
Chop green beans, then combine with potatoes in a mixing bowl. Form mixture into pancakes. Fry in olive oil.
Mix pumpkin soup, cream cheese and strawberry preserves and warm through to make a gravy.
