Sunny Anderson’s Potato Pancake Made With Thanksgiving Leftovers

Chop green beans, then combine with potatoes in a mixing bowl. Form mixture into pancakes. Fry in olive oil.

Mix pumpkin soup, cream cheese and strawberry preserves and warm through to make a gravy.

Sauté shredded turkey. Place turkey on top of mashed potato pancake and drizzle with maple syrup. Top with fried egg and gravy.
