Cucumber-Dill Salad  | Healthy Side Dish

This easy, healthy side dish comes from culinary team member Sarah Rhodes—try pairing it with her Cheese-Stuffed Swedish Meatballs, this Air Fryer Roast Chicken or Rach's Buttermilk-Brined Southern Fried Chicken.

Ingredients
  • 1 English cucumber, very thinly sliced
  • ¾ teaspoon salt
  • Generous pinch sugar, to taste
  • 1 to 2 tablespoons white vinegar, to taste
  • ¼ cup fresh dill, chopped
Preparation

Place sliced cucumber in a colander set over a medium bowl. Toss cucumber slices with salt and let drain 10 minutes. Gently press slices to drain any excess liquid, then transfer to serving bowl. Add sugar, white vinegar and dill, and toss to combine.
