Want to prepare healthy meals but short on time? Bob Harper is sharing three delicious meals that all feature his slow-cooker tomato sauce. Make the tomato sauce on the weekend, then throw it into three different recipes over the course of a week.
Bob’s tomato sauce recipe starts with a simple combo of fresh tomatoes, chicken stock and salt and pepper, which you cook in the slow cooker, then puree. Pop it in the fridge or freezer in small portions, and just grab what you need later that week!
Skinny Sweet Potato Breakfast Hash
First up, it’s a meal that could be for breakfast, or for dinner. Just add your tomato sauce to a hash of grated sweet potatoes and scallions, then serve an over-easy egg on top.
Next, Bob uses that same tomato puree to garnish chicken fajitas served in a lettuce shell. Serve with veggies and peppers for an added nutritional and flavor boost!
