- 3 cups shredded cooked chicken or turkey
- 1 1/2 cups cooked or raw broccoli florets
- 1/4 to 1/3 cup olive oil mayonnaise
- 3 tablespoons finely chopped shallot or red onion
- 1 teaspoon Dijon-style mustard
- 2 tablespoons fresh herbs, such as dill, cilantro, mint, parsley or a combination
- 1 tablespoon fresh lemon juice, or to taste
In a large bowl, combine all the ingredients and stir well to fully incorporate. Serve as a salad on a bed of lettuce or in the sandwich wrapper of your choice.
