Ingredients

  • 2 cups pumpkin seeds
  • EVOO – Extra Virgin Olive Oil
  • Zest of 1 lemon
  • A handful of poppy seeds
  • Salt and pepper

Yield

Serves: 6-9 as a snack

Preparation

Preheat oven to 400°F.

In a bowl, toss the pumpkins seeds with olive oil, lemon zest and poppy seeds. Season with salt and pepper.


Spread seeds out on a cookie sheet and roast 10-15 minutes or until they begin to brown.

Remove from oven and let cool for a few minutes before eating.
