• 1 8-ounce brick cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup pineapple
  • 1 cup Monterey jack cheese, shredded
  • 1/4 pound ham, chopped
  • 2 cups coconut, toasted
  • Rice crackers, for serving
Serves: 8

In a bowl, mix together cream cheese, sour cream, pineapple, Monterey jack cheese and ham.

Form the cheese mixture into a ball and wrap in plastic wrap to chill for 1 hour.

Place the toasted coconut onto a plate.

Once cheeseball is set, roll the cheese ball in the toasted coconut and plate with some rice crackers alongside.
