Ingredients
Canola oil, for frying
2 cups pancake mix
1 cup milk
1 fruit cake, sliced and cut into 2- to 3-inch cubes
Powdered sugar, for garnish
Yield
Serves: 20-24 donuts, depending on the size of the fruit cake
Preparation
In a table top fryer or a Dutch oven with oil, heat canola oil to 350°F.
In a mixing bowl, whisk together the pancake mix and milk. Let rest for 5 minutes.
Using a fork, dip each piece of fruit cake into the batter and coat on all sides. Drop the battered fruit cake into the oil, a few at a time, and brown on one side, for about 20-30 seconds. Flip with a fork or slotted spoon and brown the other side, about 20 seconds.
Remove with a slotted spoon and drain on paper towels.
Makes 20-24 donuts, depending on the size of the fruit cake
