Delicious Cream of Carrot Soup

Serves 6

2 pounds carrots, peeled and coarsely chopped
1/2 cup chopped onion
1/2 cup chopped celery
Canola oil spray
2 1/2 cups low-sodium chicken broth
1 cup LACTAID® Fat Free Milk


In an oil-sprayed 4-quart saucepan, sauté carrots, onions and celery for 10 minutes.

Add chicken broth and bring to a boil. Simmer for 20 minutes. Remove from heat, and cool for 10 minutes.

Using either an immersion blender or an electric blender, blend until smooth. Put back into saucepan.

Stir in LACTAID® Fat Free Milk, and cook until thoroughly heated (but do not boil).
