• 1 red chile pepper, such as Fresno, seeded and finely chopped
  • 1 green hot chile pepper, such as Serrano or jalapeno, seeded and finely chopped
  • 1 medium red onion, finely chopped
  • 3 to 4 ripe tomatoes, seeded and chopped (2 cups)
  • 2 limes
  • Salt, to taste
  • A generous handful of cilantro, finely chopped, about 1/4 cup
  • A small handful of mint, very finely chopped, a couple of tablespoons


Serves: Makes 2 1/2 cups


Combine ingredients using zest of 1 lime and juice of 2, adjust the salt to your taste.
