• 8 eggs
  • 4 stems chives
  • 4 pinches salt
  • 2 tablespoons cold butter, cut into pieces
  • 4 grinds black pepper
  • 4 slices Canadian-style bacon
  • 2 tablespoons butter
  • 1 1/4 cups (half a 10-ounce sack) shredded cheddar cheese


Serves: 4 servings


Crack the eggs into a bowl and, using kitchen scissors, snip the chives into the bowl with the eggs. Add salt and pepper, and beat up the eggs with a whisk.

Heat a nonstick skillet over medium heat. Use your scissors to chop up the ham slices into little pieces. Melt 2 tablespoons of butter in the hot skillet then add the ham. Cook 2 minutes then add the eggs and chives, and stir. When the eggs start to cook, add the little bits of cold butter into the eggs and keep stirring. Once the eggs start to firm, add the cheese and stir until melted into the eggs.
