• 1 box vanilla cake mix
  • 1 cup shredded coconut, toasted
  • 1 can vanilla frosting
  • 1 teaspoon coconut extract
  • 2 to 3 cups shaved coconut, for decorating
Serves: 8-10
Prepare cake batter according to instructions. Mix in toasted coconut and bake in two round cake pans. Remove from oven and let cool. 
In a medium bowl, mix the frosting with coconut extract.
Frost cake with coconut frosting and decorate with shaved coconut.
