These easy 3-ingredient Watermelon Ice Cream Pops from former staffer Grant Melton feature strawberry ice cream, pistachio ice cream + mini chocolate chips.

Ingredients

  • 2 pints strawberry ice cream, slightly softened
  • 1/2 cup mini chocolate chips
  • 1 pint pistachio ice cream
  • 10 popsicle sticks

Serves: 10

Preparation

Line a loaf pan with plastic wrap.

In a medium bowl, mix strawberry ice cream with mini chocolate chips. Pour ice cream into loaf pan.


Spread a layer of pistachio ice cream over the strawberry layer. Place sticks down the middle of the loaf pan. Place into the freezer for a few hours until firm.

Once firm, remove from the loaf pan and slice the ice cream in between each stick to make an ice pop! Eat immediately or place them into individual baggies and keep them in the freezer until ready to eat.
