Playing Creamy Corn Dip

Rach renders some nice smoky bacon in a cast iron skillet, then adds shallots, garlic, a Fresno chile, thyme and corn. She sautees until the corn begins to brown, then adds ricotta and chicken stock until melted, then tops with parmesan cheese and finishes in the oven. When ready, she garnishes with chives and a squeeze of lime. Delish!
