Baked Pasta with Butternut Squash, Sausage & Ricotta
For this festive and special dish, Rach cooks and mashes a butternut squash and adds ricotta, brown butter and sage, to make a wonderful, thick, creamy sauce. She adds Italian sausage cooked in chicken stock, a pound of cooked rigatoni or similar pasta and grated Parmigiano-Reggiano, mixes and pours into a baking dish. She tops with more Parmigiano-Reggiano and puts in the oven just long enough to melt and brown the cheese. Delish!
This vibrant green of this dish and the brightness of the lemon flavor will make you think of Spring. It’s a great dish to throw together after a busy workday, and the rich, creamy Ricotta sauce will win over every member of the family.
