Jeanette’s Fresh Corn Salad

4 ears fresh corn on the cob, shucked and kernels removed
1 cup grape tomatoes, halved
1 small red onion, finely chopped
1 handful fresh parsley, stemmed and chopped
1 bunch (5 to 6) radishes, thinly sliced
Zest and juice of 1 lime
2 tablespoons extra-virgin olive oil
Salt and pepper, to taste
Hot sauce, to taste (optional)


In a large mixing bowl, combine corn kernels, tomatoes, red onion, parsley, radishes, lime zest and juice, olive oil, salt, pepper and hot sauce.
