This ready-in-minutes sandwich depends on the saucy action provided by one of two options: Cola BBQ sauce vs. Whiskey BBQ sauce. So go ahead and pick your poison!

Ingredients

For the Cola BBQ Sauce:
  • Olive oil
  • 1/2 red onion, chopped
  • 1/2 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 cup cola
  • 3/4 cup ketchup
  • 1/2 cup molasses
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Whiskey BBQ Sauce:
  • 1/2 cup whiskey
  • 1 cup ketchup
  • 2/3 cup dark brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
For the sandwiches:
  • 1 rotisserie chicken, meat removed from bones
  • Bibb lettuce
  • Red onion, thinly sliced, for topping
  • Bread-and-butter pickle chips, for topping
  • 6 buns, lightly toasted

Preparation

If preparing the sandwiches with Cola BBQ Sauce, heat olive oil in a medium-size saucepan over high heat. Add onion and sauté for a minute or two then add the onion and chili powders. Reduce heat and add the cola, ketchup, molasses and vinegar, and season with salt and pepper. Cook for 10 minutes to thicken. Add the chicken, stir to combine and cook until chicken is heated through.

If preparing the sandwiches with Whiskey BBQ Sauce, in a medium-size saucepot, combine all the ingredients and bring to a bubble over medium heat. Let mixture bubble and reduce down for about 10 minutes. Once the sauce is thickened, add the chicken, stir to combine and cook just until the chicken is heated through.

Place a leaf of lettuce on the bun bottoms to prevent the bun from getting soggy then top lettuce with a serving of the BBQ Chicken, some pickles and some onion.
