Rach's Korean-Style Shrimp Scampi + Beef with Broccoli
Ingredients
3 cups apple cider
1 cup cranberry juice,
1 cup pear juice,
Bundle of sage, rosemary, and bay leaves
5 all spice berries
1 orange, sliced
1 lemon, sliced
Pear or regular brandy
1 bottle of red wine (I prefer Barbera)
Sliced pear and fresh cranberries (for garnish)
Yield
Serves: 12
Preparation
Heat all ingredients in a medium saucepan. Using a spider, remove solid ingredients before serving.
For non-alcoholic or kid-friendly drink, ladle the hot cider into a mug or goblet, garnish with cranberries and pear slices and serve.
For a boozy version, pour 1 shot of brandy into a mug or goblet, roll around to coat the sides then fill halfway with hot cider. Top off with red wine.
Rach explains that adding Parmigiano Reggiano rinds to soups and sauces can give them added cheesy flavor, so her hack is to keep them in your freezer.
