  • 4 tablespoons butter
  • 1/4 cup grated onion and its juice
  • 4 tablespoons flour
  • Salt and coarse black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef consommé
  • 3 cups chicken stock


Serves: 1 quart


Melt butter in a saucepot over medium to medium-high heat. Whisk in onion and flour and cook a minute then add salt, pepper, Worcestershire, beef consommé and chicken stock. Simmer to thicken a bit.
