Prosciutto Roasted Chicken Piccata

Laura Vitale’s super-easy chicken piccata is great for a mid-week dinner


1 1/2 pounds boneless, skinless chicken thighs (I used 4)
4 slices prosciutto
1 tablespoon olive oil
1/2 teaspoon granulated garlic
1/2 teaspoon Italian seasoning
1/4 cup white wine
1/2 cup chicken stock
1 tablespoon unsalted butter
2 tablespoons capers
Juice of 1/2 lemon
2 cloves garlic (I used dehydrated garlic but fresh will be great here)
1 tablespoon freshly chopped parsley
